“Breaded” Lemon Chicken - It’s Healthy

As kids head back to school and schedules are again filled with nightly activities, here is a quick, yummy (and not to mention, healthy) dinner for your family that won’t leave them saying “not chicken again….”

 “Breaded” Lemon Chicken 

  • 6 Boneless skinless chicken breast halves
  • Store bought lemon or lemon pepper marinade
  • ½ cup dry bread crumbs
  • ½ cup ground flax seed (or flax seed meal)
  • Steamed veggies of your choice
  • Baked sweet potatoes 

 

  1. Put chicken breasts in plastic bag.  Add marinade.  Set 2-3 hours or overnight.
  2.  Flatten chicken to 1/2 inch thickness. 
  3. Coat chicken with bread crumb mixture. 
  4. Place is greased backing pan. Back uncovered at 350◦ for 20-25 minutes or until juices run clear. 
  5. Meanwhile, prepare steamed veggies and cook each sweet potato in the microwave for 5 minutes.
